Poached Egg and Asparagus

"All happiness depends on a leisurely breakfast."
-John Gunther

I had breakfast outside with Lovie this morning (isn’t she pretty?). But even better was what I had to eat. Poached eggs are undoubtedly my favorite breakfast food, and when you combine them with asparagus it’s even better; And every morning is better with something sweet so I added cinnamon toast with bananas on top for dessert!  Enjoy the recipes below. CQ

Poached eggs with Asparagus on Toast
Quick and Easy Microwave Asparagus:
1.       Break ends off asparagus stems.
2.       Place remaining tips into a plastic zipper bag and fill with water, just to cover asparagus.
3.       Microwave 30 to 45 seconds then let cool.
Poached eggs:
1.       Begin by boiling water in a medium pan, about half full.
2.       Break 1 egg into a small glass or coffee mug and wait for the water to simmer.
3.       When the water simmers, gently pour the egg into the pan.
4.       Immediately cover and remove from the heating element.
5.       Time for 3 minutes then gently remove the egg with a slotted spoon.
While cooking the asparagus and egg toast some bread and then combine for the delicious final product.
Cinnamon Toast with Banana:
1.         Preheat oven to 350°F.
2.         Put a few small dabs of butter on bread then sprinkle with ½ cinnamon, ½ sugar mixture.
3.         Bake for 5 minutes, watching closely.
4.         Slice a banana and place slices on top of toast after removing from the oven.
